Note: None of the recipes given are exactly as I originally found them in these books, since I like to fiddle with things. As you might guess from the fact that I've been putting together this information on herbs and spices, I tend to spice things up a little more than the original version. I also cut down (sometimes a lot) on the fat, and omit steps in recipes that I think are "fussy" (such as peeling tomatoes). And sometimes I toss in another ingredient that I think improves the flavor, color, or texture.

Still, these books contain a whole lot of really great recipes, and I recommend them whole-heartedly.
